Peanut butter cupcakes

If you love peanut butter as much a me then these cupcakes are for you . Easy to make no filling just cake and a peanut butter frosting.





Cupcake

1/3 cup shortening
1/3 cup  peanut butter
1 1/4 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 3/4 teaspoon  baking powder
1 teaspoon salt
1 cup milk

 Large mixing bowl  cream together shortening, peanut butter, and brown sugar until light and fluffy

Add eggs one at a time beat well after each egg

Add vanilla

Combine  flour, baking powder,and salt  add to mixture  alternating with milk.


Peanut Butter frosting

1/2 cup butter

1 cup creamy peanut butter

4 cups confectioners sugar

1/3 cup cream


beat butter and peanut butter until fluffy

Slowly beat in half of confectioners sugar

Mix in 1/4 cup of cream

Beat in reaming confectioners sugar .

If necessary  add more cream or milk  til the frost reaches an consistency that you like

Cookies and cream oreo cupcake

This cup cake is over the top simply put. The cookies and cream frosting to the Oreo filling to the moist chocolate cake will have you coming back for more. Its easy to make  and in a cupcake competition its only second to that amazing bacon maple cupcake (see post ) so get the kids an head for the kitchen.


Cupcake

1/2 cup cocoa
1 cup boiling hot water
1 1/3 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup of butter- room temperature
1 cup sugar
2 eggs
2 teaspoons vanilla

Preheat oven to 350

In a small bowl stir until smooth the cocoa powder and hot water let cool

Beat together butter and sugar until light and fluffy

Add eggs and beat one at a time and then add vanilla

Mix in flour, baking powder,and salt

stir in cooled cocoa mixture and stir until smooth

Fill into a mined muffin pan and bake 16  to 20 minutes

Filling

4 tablespoons softened butter
1/2 cup shortening
1/2 teaspoon salt dissolved in 1 teaspoon of water
1 teaspoon vanilla
2 cups confectionery sugar

Cream together butter and shortening

add remaining ingredients and beat until fluffy

Frosting

2 sticks of butter
1/8 cup heavy cream
1 teaspoon vanilla
4 cups powdered sugar
6 Oreo crushed

Beat  butter,cream, and vanilla smooth

slowly add in powdered sugar
beat mixture for 2 min
fold in crushed Oreo





for the filling you can use a small pairing knife or use can use a cupcake corer  like the one i have

When it comes to baking at home it helps to have the stuff you need handy. So what do you need on hand to bake. Well it fairly simple an and a huge list of ingredients is not need. Thing you will  find the most helpful and that you will use in pretty much everything you bake are.

All-purpose flour

Granulated sugar

Confectioners sugar

Salt and pepper

With these staples handy in your kitchen. You find a wide variety of stuff you can make.You will also be glad that you do have them handy cause there is nothing worse than forgetting something at the store(usually one of these staple is forgotten in the grocery store)

Mini Chocolate cheese cupcakes

Mini cupcakes are just a popular or even more so than regular cupcakes and  after all why not  just as good as the regular cupcake but bite size .  If you love cheesecake and  chocolate you will love these fairly simple to make chocolate cheese cake Minnie's

Topping 

1 (8 oz) pkg of cream cheese
1 egg
1/3 cup sugar
1/8 teaspoon salt
1 (6oz) pkg of mini chocolate chips


Cake 

1 1/2 cups  flour
1 cup sugar
1/4 cup Hershey's cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/2 cup cooking oil
1 tablespoon vinegar
1 teaspoon vanilla


Mix topping ingredients together set aside.


Blend all cake ingredients together.Fill cups 1/2 full with cake batter add 1/2 teaspoon topping. bake at 350 for 15 to 18 minutes

Let cool and enjoy

Everybody wants to decorate cool cakes from t.v to magazines and hey  its even here. So what do you need to decorate a cake . There are lots of stuff out there to help you and most do . You cant go wrong just picking up anything for your tool kit. you never know when something might just come in handy. But here I'm going to show you and explain a little about the basic stuff that comes in handy on every cake .


TURN TABLE



When it come to frosting cakes I cant believe i made to as long as i did . The first cake you use with one,you wont want to not use one. These have many styles and prices , but they all will work very well. You can even use a  lazy Susan and some times you can pick them up very cheap at you local department store.

CAKE BOARDS




Cake boards are all shapes sizes and can be custom cut to your likening. they make handling your cake a lot easier every cake needs something to sit on these boards can be just as decorative as the cake itself.

FROSTING COLORS




use these for any frosting that needs color there are plenty variety . these work great with coloring fondant or gum paste. Butter cream  I think is what they should be used for since they are gel and not like the one in the grocery store that are water based an could thin the butter cream, if a stiff constancy was needed.

TIPS COUPLERS AND BAGS



The most important thing you will need in your tool box is  tips, couplers, the bags .  There are a alot of different tips from star to leaf to writing tips, all sizes . if your just starting out decorating  you can pick up sets of tips. Sets usually have a variety of the most popular tips  some may even have a coupler  or two with them.

Couplers some may not even now just what this is or how it works with the tips and the bags. Using one  for the first time may seem tricking But they are very helpful when tips need to be changed for the same  frosting color,  this will help on clean up and  waste of bags ( if disposable bags are used).

Bags come in different sizes  and styles. Having reusable bags  helps on cost  but disposable bags can just be tossed when done ( don't forget to remove your tip an coupler first)


SPATULAS AND CAKE COMB

A cake can not be iced with out spatulas, again you will find a variety. Angled spatulas work great for sides and top of cakes . Flat spatulas are great  for a adding frosting to cakes but i find it hard to really frost a cake well with these types.  Cake combs are wonderful for really getting a smooth finish to your frosting most cake combs have decorative sides on them as well for cool designs  on the side of cakes

Redneck Mossy Oak Cake

This was a birthday cake a friend. Its not really a cake though its brownies bake in a 12x 18 sheet pan. The cut in half frosted and stacked. A lot of ideas were passed around on just what kind of cake to make. Until my wife found a site that sells custom printed frosting sheets and they had one in mossy oak and we knew that was where we were going with it and it turned out great .


The Mossy Oak was printed on a frosting sheet , so it was like a sticker but was edible. and for the boarder we made butter cream and colored it with juniper green. Here are a few more pics .

Bob Marley Airbrushed cake

A Great way to decorate a cake is to use a airbrush. Airbrushes come in all types, but that's another story. So I thought  id go thru the steps of how i made this Bob Marley cake. Yea its not perfect but its not suppose to be its to show you an advantage of using an airbrush. So how to start  well you wi have to  do a little research and use a tried  true way  for airbrushing. Search out a Bob Marley stencil or any other stencil you looking for. Once printed out  just use a xato knife to cut out the stencil. Here are a few  pics of mine thourgh the process

While you are doing that bake the cake. Pan size can be what you want it to be. I  used a 12 x 18 sheet pan. Now with the cake done and your stencil cut out its time to frost the cake use a crumb coat  first so you don't have crumbs around . With the cake all frosted and apply your stencil gently  on to the  frosting butter cream works great.  make sure all your corners are down to avoid over stray . If after removing the stencil there is over spray just use more frosting to to cover up. you will see the over spray in mine as i didn't add more frosting for this blog purpose.



At this point  put in fridge for a few to let dry and the frosting to set.Then using a tooth pick i marked the lines for the back colors and finished the cake. i added some boarders around the edges just to finish it off.

Bacon Maple Cupcakes

These Bacon Maple Cupcakes  are a hit around my house and now they can be at yours to. Ive already got Birthday orders in for this cupcake and there Birthday isn't til October. There are three parts to this cupcake frosting, filling,and the cake itself.

This is what you need.

Cupcake.

6 strips of bacon
4 1/2 tablespoons butter
1/2 tablespoon bacon grease- solidified
1 egg
1/3 cup brown sugar
1/3 cup maple syrup
1 1/4 cup flour
1 teaspoon baking soda
1/2 teaspoon baking powder
pinch of salt
1/4 cup milk


Cook bacon, preheat oven to 350. ( try to keep bacon flat  and save for garnish)

Pour grease into container and refrigerate until some what solid.

Combine butter grease until creamy.

Beat in brown sugar, maple syrup, and egg until well combined.

Slowly add in flour, baking soda, baking powder,and salt.

Fold in milk until creamy.

Place in lined muffin tin 2/3 the way full and bake at 350 for 20 minutes

Filling

1/4 cup sugar.
3 tablespoons cornstarch.
2 cups milk.
3 egg yolks slightly beaten
1 teaspoon vanilla

in a 1 qt. saucepan mix sugar and cornstarch.

Gradually stir in milk until smooth.

slowly add in egg yolks, stirring constantly.

Bring to a boil over  med -low heat.

Boil for 1 min and remove from heat.

stir in vanilla

Cover custard surface with saran wrap an chill until cold.

Frosting

4 tablespoons butter
3 tablespoons maple syrup
1 cup confectioners powdered sugar

Beat together butter and syrup.
slowly add in sugar- adding more if necessary.



So now you got all your stuff made and your cupcakes are cooled . its time to put everything together its a pretty easy to do. i just wanted to share with you the tips I use to fill the cupcakes .To core the cupcakes. you can use a little pairing knife or what i like to use to get the same size and depth is a cup cake corer  I found this one on amazon for a pretty cheep pricehttp://www.amazon.com/Cuisipro-747166-Cupcake-Corer/dp/B004OFGWBI/ref=sr_1_1?ie=UTF8&qid=1331847799&sr=8-1






Fill a pastry bag with the custard and fill each up cupcake. Using another pastry bag fill with frosting and top.
As for the Bacon cut each piece in half  toss in sugar and top the cupcake.

Emergency substitutions

So you got a new recipe and you have all the stuff you think you need.Only to find out halfway thru you forgot something at the store,or you don't have as much of something as you thought.Don't freak out a lot of times there can be a substitution made to cover for what you need. That's where this blog comes from. A friend of a friend of a friend (thanks Donna)was going to toss out a really good cook book for home baking but thought of me before doing so. 1 cup  cake flour  =  1 cup minus 2 tablespoons all-purpose flour

1 tablespoon cornstarch =  2 tablespoons of all-purpose flour

1 teaspoon baking powder =   1/2 teaspoon cream of tarter plus1/4 teaspoon baking soda

1 package active dry yeast =  1 cake compressed yeast

1 cup  sugar = 1 cup packed brown sugar or 2 cups sifted confectioners sugar

1 cup  honey =  1 1/4  cups sugar plus 1/4 cup of liquid

1 cup corn syrup =  1 cup sugar plus 1/4 cup liquid

1 square ( 1 oz.)                    3 tablespoons unsweetened cocoa powder plus
unsweetened chocolate =     1 tablespoon shortening or cooking oil 

1 cup whipping cream, whipped = 2 cups whipped dessert topping

1 cup buttermilk = 1 tablespoon of lemon juice or vinegar plus enough whole milk to make one cup (let stand 5 min)

1 cup whole milk =  1/2 cup evaporated milk plus 1/2 cup water or 1 cup water plus 1/3 cup nonfat dry milk powder

1 cup light cream =  1 tablespoon melted butter plus enough milk to make 1 cup

1 egg =  2 egg whites plus 1 teaspoon vegetable oil

1 teaspoon lemon juice = 1/4 teaspoon vinegar

1/2 cup ( 1 stick) butter or margarine =  7 tablespoons vegetable shortening

This table of substitution has come in very handy a lot of times. Hope you find it just as helpful.

Carolina BBQ sandwhich

One thing i love is good BBQ.There are a lot of ways its served. one quick look at  http://en.wikipedia.org/wiki/BBQ will let you know that BBQ is pretty serious business.Out of a lot of BBQ choices Id like to share one that's more my style. Carolina style to be exact vinegar, based and good to the taste
This has to be the best BBQ Period


One Pork Boston Butt

the sauce
2 cups apple cider vinegar.
1/2  cup of water.
2 tablespoons sugar
1 1/2 teaspoons Worcestershire sauce.
1 1/2 teaspoons of salt.
1 1/2 teaspoons of pepper
1 cup of ketchup

If your looking for a little extra kick add one tablespoon of red Chile flakes

Mix all ingredients in medium sauce pan whisk over medium  low heat for 30 min

For the Boston butt  I like to place it in the crock-pot brush on some liquid smoke. Ill make the sauce twice once to use to pour in to cook with the pork cook until meet is tender and just fall apart. Make the sauce again while its cooking up drain whats in the crock-pot. using two forks pull  the pork apart,removing any bones. Once the sauce is done pour over the pork  and enjoy. Here's how I like mine served up




Deviled eggs and some down home southern style potato salad . If you love BBQ you have yo try this.

Guitar cake

A cool cake that's great for all kinds of occasions is a guitar cake. So if you got a guitar player  or a  little rock star who has a birthday coming up this cake is sure to please. All you need is a little time and a few basic cake decorating tools. This is what the ramblin chef used to make this guitar cake.

1) Square cake pan sized to fit guitar template.
2) Cut out of a guitar outline.
3) Butter cream  frosting.
4) Piping bag an tip .
5) Frosting colors .

Bake your cake using whatever kind of cake or cake mix you want. After the cake is baked and cool. Your are now ready to use your template to cut out the guitar shape
Once you got your two shapes cut out. You are ready to place them together and crumb coat them

Store the cake in the fridge for at least 30 min, longer will not hurt the cake as you want the frosting to be firm. While that is in the fridge with the left over butter cream  divide in to bowls and mix the colors that you will be using . Black is best used for the strings the frets and any other detail that may be need . Black frosting is used in the piping bag with a small round tip. Once the cake is set and ready for the frosting apply  to sections of the guitar that you want that colored.
