Frosting Butter cream, Fondant, Royal icing

When it's time to frost the cake what is the best frosting to use. There are a lot of different option depending on what you are trying to achieve.So I'm going to explain the 3 main types of icing i use and what they work best for.

Butter cream

Butter cream is the best icing to use i use it for all my cakes. Whither it be piping borders, underneath fondant, and or as the main icing for the cake. Butter cream is the most versatile of all icing and its consistency can be changed very easily a thinner butter cream is easy for spreading  and layering cake. Stiffer butter cream will dry harder to help achieve shell boarders, leaves, and flowers plus many for things. Butter cream can easily be colored to any color you desire. When coloring butter cream its best to use icing jells from your local cake or craft store the reason for this is that traditional food coloring found in your local grocery store is very water based. When adding  water based food coloring to your butter cream an and can alter the consistency and make it very difficult to make  flowers or anything else for that matter.

Fondant

Fondant is probably the icing with the most questions. people really aren't sure just what it is. The two most common  questions regarding fondant are can you eat it and dose it tastes good. Yes you can eat it  an no its not the best tasting stuff. there are two types of fondant one being store bought from your local cake or craft store. This type of fondant is not very tasteful at all. The second type of fondant is marsh mellow fondant,because of the marsh mellows this fondant dose have a little better taste  but marsh mellow  fondant is made at home and cant be bought. I use marsh mellow fondant for any cake i make where fondant is needed. So if your wondering why if it doesn't taste good why use it.Fondant creates a very smooth surface and most fondant cakes are really just for the wow factor  as fondant cakes  can be a bit more pricey. Fondant can be very difficult  to work with.

royal icing

Royal icing is only used for decorations on cakes because it dries very stiff  which makes great  flowers  boarders.egg whites or meringue powder  is what gives  royal icing its stiffness.

All three icing types can produce very nice cakes. butter cream or royal icing or fondant can all be used  together to achieve a cake that your proud of and your customer will surely appreciate

Flip Flop Cake

Summer is coming and there is nothing better than heading to the beach . This cake has got a real beach feel to it  and its easy to make. A few basic tools and a little time is all you need .

make your favorite cake  and use a flip flop pattern to carve out your shape. make enough butter cream for all the color you plan on using . There are a lot of different ways to go about making this cake . The one pictured was done quick using butter cream  some incing colors and a few tips. to make the sand use gram crackers crushed up  you can really take this cake a lot further than i did . This cake was done for the sole purpose of doing this blog  an to inspire you to create your own cake instead of just try to copy the pic

Peanut butter cupcakes

If you love peanut butter as much a me then these cupcakes are for you . Easy to make no filling just cake and a peanut butter frosting.





Cupcake

1/3 cup shortening
1/3 cup  peanut butter
1 1/4 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 3/4 teaspoon  baking powder
1 teaspoon salt
1 cup milk

 Large mixing bowl  cream together shortening, peanut butter, and brown sugar until light and fluffy

Add eggs one at a time beat well after each egg

Add vanilla

Combine  flour, baking powder,and salt  add to mixture  alternating with milk.


Peanut Butter frosting

1/2 cup butter

1 cup creamy peanut butter

4 cups confectioners sugar

1/3 cup cream


beat butter and peanut butter until fluffy

Slowly beat in half of confectioners sugar

Mix in 1/4 cup of cream

Beat in reaming confectioners sugar .

If necessary  add more cream or milk  til the frost reaches an consistency that you like

Cookies and cream oreo cupcake

This cup cake is over the top simply put. The cookies and cream frosting to the Oreo filling to the moist chocolate cake will have you coming back for more. Its easy to make  and in a cupcake competition its only second to that amazing bacon maple cupcake (see post ) so get the kids an head for the kitchen.


Cupcake

1/2 cup cocoa
1 cup boiling hot water
1 1/3 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup of butter- room temperature
1 cup sugar
2 eggs
2 teaspoons vanilla

Preheat oven to 350

In a small bowl stir until smooth the cocoa powder and hot water let cool

Beat together butter and sugar until light and fluffy

Add eggs and beat one at a time and then add vanilla

Mix in flour, baking powder,and salt

stir in cooled cocoa mixture and stir until smooth

Fill into a mined muffin pan and bake 16  to 20 minutes

Filling

4 tablespoons softened butter
1/2 cup shortening
1/2 teaspoon salt dissolved in 1 teaspoon of water
1 teaspoon vanilla
2 cups confectionery sugar

Cream together butter and shortening

add remaining ingredients and beat until fluffy

Frosting

2 sticks of butter
1/8 cup heavy cream
1 teaspoon vanilla
4 cups powdered sugar
6 Oreo crushed

Beat  butter,cream, and vanilla smooth

slowly add in powdered sugar
beat mixture for 2 min
fold in crushed Oreo





for the filling you can use a small pairing knife or use can use a cupcake corer  like the one i have

When it comes to baking at home it helps to have the stuff you need handy. So what do you need on hand to bake. Well it fairly simple an and a huge list of ingredients is not need. Thing you will  find the most helpful and that you will use in pretty much everything you bake are.
